Why we cook this way

“We are a vegan and vegetarian restaurant because we believe in doing our part to combat climate change.”

It is not a restriction. India has cooked without meat for millennia — with more imagination, more spice craft and more joy than most cuisines on earth. We simply carry that tradition into a warming world.
